The SAD diet - (the Standard American Diet) - can only make you sad. Eating meat and dairy products is the SAD diet. It causes heart disease, cancer, diabetes and makes you fat. Raising animals for food destroys the environment. And those animals are not happy - they are enslaved and live humiliating, fearful lives of abuse and tremendous suffering. I think that the American diet is a very large part of the reason we're spending 2.3 trillion dollar per year on health care in this country. 75% of that money goes to treat chronic diseases, preventable chronic diseases, most of those are linked to diet.
So, when it comes to eating healthy, it's just doing the right thing. And it's not something you have to do 365 days a year, but I think it's something you have to do 25 days a month. Let's put it that way.
Look at the average American diet: ice cream, butter, cheese, whole milk, all this fat. People don't realize how much of this stuff you get by the end of the day. High blood pressure is from all this high-fat eating.
Meatless Mondays is a dead-simple strategy. Anyone can do it, and it doesn’t require major sacrifice. Even if you eat a typical American diet replete with processed, junk and fast food the other six days of the week, going meatless on Mondays will still cut your carbon footprint, improve your health and reduce demand for factory-farm meat.
The longer I've looked at these questions, of the American diet and the public health crisis that we face because of that diet, the more I've come to the conclusion that the collapse of cooking is a big part of the problem.
